Abstract

This study aimed to develop biodegradable, active, edible films based on calcium alginate, incorporating nanopolyphenolic antimicrobials from olive leaf extract (OLE) and olive pomace extract (OPE), combined with ZnO nanoparticles (ZnONPs) in a nanoemulsion. The nanoemulsion and film-forming solutions were characterized by particle size distribution, zeta potential, rheology, FTIR, and scanning electron microscopy (SEM). Film properties (thickness, tensile strength, elongation, and solubility) were evaluated, and the resulting coatings/films were applied to fresh persimmon fruit stored at 5 ± 1°C and 90–95% RH for 20 days. Compared with the uncoated control (A), all nano-coated treatments (B–D) reduced microbial growth, slowed physicochemical deterioration, and extended shelf life, with antimicrobial effectiveness increasing with higher nanoemulsion concentration (B < C < D). The improved preservation performance was attributed to the combined action of phenolic compounds and ZnONPs, which enhanced film stability and functionality while maintaining acceptable sensory quality and suitable gas and moisture barrier properties. Overall, calcium alginate films enriched with OLE/OPE–ZnONPs nanoemulsions show promise as potentially effective, low-cost edible coatings/films for fruit preservation and broader food packaging applications
